In many countries there is a dish with a funny name "Poor Knight". You will not find anything better for it to have breakfast, but where it came from - such a romantic name?
A few years after the conquest of Jerusalem by the Crusaders in the Holy Land there rushed a stream of pilgrims. They called themselves "poor knights of Jesus Christ" and later "Knights of the Temple" or "Templar", and as "The Temple" in French. Years have passed, and the name of the Order of "poor knights" became preserved only in popular name of the old days dishes. Some argue that it was already known in Roman times. Others have reported that this recipe was first mentioned in Germany around 1691, and the very name of the dish "Poor Knight» ( «Armer Ritter») appeared in the same place, but in 1787.
It was only a century later, when this cheap food has become popular among university students in Germany, Scandinavia, Poland and the Baltic countries. Easy-to-prepare dish came to the rescue of any person who, without possessing any culinary skills, did not want to mess around in the kitchen for a long time and who did not have anything but a cup of milk, eggs, a pinch of salt, butter and a piece of dry bread.
However this "knight" in various countries is prepared in different ways.
In Germany - the country where was born this funny name - dish "Poor Knight" - one of the most humble. Take a loaf of stale bread, a glass of milk, 2 eggs, 1 table spoon of butter, 3 table spoons of sugar, a pinch of cinnamon and flour.
Milk mixed with the eggs, add a little flour and mix well. Baton cut into neat slices, dipped in the prepared mixture, fried in oil on both sides until becoming golden brown, sprinkled with sugar, cinnamon, and served hot.
The Russian recipe, along with the romantic name came from the student environment of German universities in the Baltic States in which many Russian students were taught in the XIX century.
Now this dish is undeservedly forgotten, no one remembers its name and even rarely cooked, using, as in the old days, a simple recipe, taken from Germany.
Meanwhile, modern recipe for dessert with the same name may look like this: take a loaf of stale white bread, 3 eggs, 50 g sugar, grated zest of 1 lemon, a pinch of salt, 1 cup of milk, bread crumbs for frying, butter, ground cinnamon.
Break the eggs and separate the yolks from the whites. Mix in a bowl the egg yolks, sugar, zest, salt, milk. Cut loaf into slices 1 cm thick, pour the prepared mixture and give them a good soak. Then slices should be dipped in a mixture of proteins with 2 tablespoons of water, rolled in breadcrumbs and fry them in oil on both sides until becoming golden brown. Sprinkle them with sugar and cinnamon, or put on roasted slices of cranberry, strawberry, strawberry jam and decorate them with whipped cream.
In England, the fried bread was given the name of the magnificent "Poor Knights of Windsor" in honor of King Edward III founded in the XIV century military order "Poor Knights of Windsor." There were several dishes recipes.

Another recipe, which has been preserved since 1500, said that you need to take 4 slices of bread, 2 eggs, 200 ml of white table wine, 1/2 tablespoons of cinnamon, 1 ½ tablespoons of granulated sugar, butter.
In a deep dish mix the eggs with wine, cinnamon and sugar. Put to the prepared mixture slices of bread without crust and held them there for three minutes. Fry it in oil on both sides until becoming golden brown. Sprinkle it with sugar and cinnamon.
In France, a dish called in England, Germany and Russia "poor knight", is called "Lost bread". The name comes probably from one of the ways you can use dry bread.
French recipe, as it should be in French cuisine, is a complex, which gives the cooked meals rather refined taste and attractive appearance.
According to the recipe for cooking dishes you must take 12 thick slices of bread, 6 eggs, 1 cup of cream, 1/4 spoons of salt, 1 table spoon of ground cinnamon, alcoholic vanilla extract 2 cups crushed almonds, 2 tablespoons of butter, powdered sugar, chopped fruit.
Mix the eggs and cream, add salt, cinnamon and a few drops of vanilla extract. Slices of dry baguette must be dipped in the prepared mixture and should be there for five minutes. Rolled it in crushed almonds and fry it in butter on both sides until getting brown, sprinkle with powdered sugar, and put some pieces of fruit.
In another recipe you are to take 8 slices of stale white bread, 2 eggs, ½ cup sugar, 1 table spoon of corn starch, 1 cup of milk, 1/2 tablespoons of grated nutmeg, butter, icing sugar, ground cinnamon, jam.
Whisking eggs, poured sugar, stir thoroughly, add the starch, dissolved in a small amount of water, milk, nutmeg and stir again. Sliced bread is dipped for a few minutes in the prepared mixture, stir should be fried over medium heat on both sides. Sprinkle with powdered sugar and cinnamon and put on slices of jam.
In the United States the name of the dish is even more original - "French toast". And the name "French toast" takes its appearance of poor knowledge of English grammar by Joe French - the owner of a roadside inn near the town of Albany.
In 1724 he had the idea to name the toasted bread, pre-soaked in a mixture with the egg milk in his honour. He did not know that his name was translated as "French".
Not having any idea of the possessive case, D. French wrote in the menu «French Toast» without the use of an appropriate apostrophe.
New dish quickly became a favorite breakfast for bustling Americans who had not anything to do with the fact that it has nothing about the French cooking. Two hundred eighty-four years have passed since that time, no one has found neither the time nor the inclination to fix a grammatical error.
In order to prepare the American "poor knight", it is necessary to take 12 slices of white bread with a crust, 6 eggs, 6 tablespoons of milk, 1/2 spoon of salt, allspice, a few drops of alcohol extract of vanilla, melted butter for frying.
In a bowl mix eggs, milk, salt, pepper and vanilla, add 3 tablespoons of water. Steep the bread in the prepared mixture, remove, allow to drain out the excess mixture and put in a pan with very hot oil. Fry on both sides and serve hot with maple syrup, honey, sugar, jam and even with ketchup and various sauces.
Assuming that the abovementioned recipes are available to everyone, I want to conclude by noting that, along with undeniable taste qualities dish "Poor Knight" is a nutritious, well-balanced for proteins, fat and carbohydrate foods, useful both for physical and for mental performance.
