To make kilishi, muscle meat is cut into slices which are dried for a short time in the sun.

The slices are then dipped into a mixture of water, flour and various spices and dried in the sun again with this coating. They are then smoked over a fireplace, to improve their flavor .

I've tried suya here and in Houston and it's just never the same like the suya from back home. Guys do you think it's the smoke form the pit that gives suya from Nigeria that distinctive sweetness or just the Nigerian meat.

Kilishi is definitely cool

Suya is still the bomb!

But since I now know that Balangu is what you call (ram suya), then that is definitely off the chain on my list.

Balangu and beer for me please
