Christmas breakfast is especially merry when this colorful frittata is on the menu.

Ingredients

* 1 medium onion, chopped

* 1 medium green pepper, chopped

* 1 garlic clove, minced

* 2 tablespoons butter or margarine

* 1/2 cup chopped tomatoes

* 1/4 cup minced fresh parsley

* 5 eggs, lightly beaten

* 2 cups shredded mozzarella cheese

* 1/2 cup soft bread crumbs

* 1 teaspoon Worcestershire sauce

* 1/2 teaspoon salt

* 1/4 teaspoon pepper

Directions

1. In a skillet, saute the onion, green pepper and garlic in butter for 5 minutes or until tender. Remove from the heat. Stir in tomatoes and parsley; set aside. In a large bowl, combine the remaining ingredients. Stir in reserved vegetables.

2. Pour into an ungreased 9-in. pie plate. Bake, uncovered, at 350 degrees F for 25-30 minutes or until a knife inserted near the center comes out clean. Let stand for 5 minutes before cutting.

Please try this. It's very simple and believe me when i say "you are gonna love it"

A Potato Dish for Julia

2 medium new potatoes

1 small clove garlic

Salt

4 teaspoons butter

Freshly ground black pepper.

1. Peel the potatoes and slice them very thin, about 1/8-inch thick. Peel and mince the garlic, then with the flat of your chef’s knife, mash it with a little salt into a paste. Work about 1 teaspoon of the butter into it and set it aside.

2. Heat 1 1/2 teaspoons of the butter in a small frying pan over medium-low heat, and lay in half the potato slices, overlapping slightly, to fill the bottom of the pan. Salt and pepper them lightly, and smear the garlic paste on top. Add the remaining potatoes, season lightly and set a small cover askew on top of the pan. After about 8 minutes, turn the potatoes by setting a small, sturdy plate on top of the pan and flipping them over and onto it. They won’t hold together in perfect shape, but don’t worry.

3. Heat the remaining butter in the pan and slide the potatoes back in. Let them cook, semicovered, for 5 minutes, then uncovered for a couple minutes more, until nicely browned. Slide them onto a warm plate, season to taste and let them mingle with whatever juicy meat you’re treating yourself to for dinner.

Serves 1 or 2.

~My [b]Potato & Pasta Salad has some of your combo!

Ingrdients

•Potatoes

•6 Eggs Mashed or Quarted

•330g Tin Sweetcorn drained

•240g Mayo

•1 cucumber, sliced/diced or quartered

•2 Tomato sliced/diced or quartered

•Fusilli/Farfelle Pasta

Method

1. Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool and chop/Dice.

2. Boil Eggs, In a large bowl: Gently Stir mash/quatered eggs,half of the Sweetcorn & potatoes with mayo until creamy

3. Bring a pot of salted water to Boil,add Pasta,cook untill tender then drain

4. In a Deep bowl/dish,put some pasta at the bottom of the bowl then layer it w/ the potato/sweetcorn & egg mix: Repeat w/ Pasta then Potato mix. . i usually do 2/3 layers depending on how deep the dish is. . . .

FootNote: The potato should always be the last layer,put the rest of the sweetcorn,diced Cucumber & tomato on top

Either (diced or shredded), i also mash it together with the potatoes - gives it a hint of the sweet.

Potato salad I enjoy, I add mayo, boiled eggs, sweet corn to mine.Simple and easy to make. I guess most potato salads can be improvised. Bacon isnt readily available at home in bongo.But good nutritious food I enjoy.
